Happy Easter

The Easter meal is done, the eggs are dyed, the jellybeans eaten and the children are all snug in their beds. With the first utter of silence all day since the Easter Bunny visited us early this morning I can reflect on my blessings this Easter day.

I am blessed to see two dreamy faces sleeping blissfully.
I am blessed to have found one true friend for a lifetime.
I am blessed to have a lovely home in these trying economic times.
I am blessed to be able to sit on my front porch and take in Spring in all its splendor while listening to my birds chattering away.
I am blessed to be taking a much needed vacation to spend time with the ones I love.
I am blessed to appreciate the simple things in life.
I am blessed to appreciate each day and everything I have as God intended.

The little vintage picture reminded me of family; how family works together as a team to accomplish something. How cute that a little bunny family is working together as a team to color an egg for Easter.

Sunday Blues & Dreading Monday

Spring is a rebirth of sorts will all the flowers and trees coming alive from a deep winter sleep. Unfortunately all that blooming brings a myriad of runny noses and itchy eyes. Needless to say I am not a happy camper today. I've been taking Claritin and that wasn't doing anything so I went and bought some Zyrtec and hoping that will do the trick. I hate taking anything at all but I won't be able to function at work like this.

In spite of my misery I did manage to do a little organizing and laundry. I also made my favorite "fast food"; falafel and tabouleh salad. I do prefer to make my own falafel mix but figured I would try a ready mix I found in the grocery store.



You basically mix it with water and let it sit for about 10 minutes. Then you shape them into small balls or patties and fry in a skillet with olive oil. You can also bake in the oven which I opted to do to save on calories. The ready mix is a little dry and I do think frying in oil makes the falafels a little moister. I usually made greek tzaziki sauce to dip the falafel in. It's very easy; just a mixure of finely chopped cucumber, plain yogurt, lemon juice, red wine vinegar and salt. I also made Tabouleh salad using a mix with the spices already in the bulgur. It was actually very good; I was pretty impressed! I chopped up tomatoes, cucumbers and added them to the salad along with a little olive oil and lemon. Very tasty and very filling!




Here is my finished lunch and of course the kids won't touch it but not bad for a veggie meal.

Springtime & Bargain Seeking in Texas

Today was absolutely perfect weather other than the blanket of yellow pollen covering everything outside. So, being the bargain shopaholic that I am I got up early, grabbed a cup of coffee and headed to our annual community yard sale.

Here are a few goodies I picked up for less than $22! That will buy you less than 7 gallons of gas these days and this was so much more fun!

Lot of 20 cookbooks that are usually displayed on the grocery store checkout aisle $4



Scrapbooking Magazines for 10 cents each and The Ultimate Papercrafts Book that retails at Michael's for $19.99; $3


Potato/Onion Bin; This was the most expensive buy of the day at $7. I am brainstorming with this one of how I can jazz it up with some handpainted flowers or fruit. It is very sturdy and appears to be the same kind that you find in Amish markets.
