Sunday Blues & Dreading Monday

Spring is a rebirth of sorts will all the flowers and trees coming alive from a deep winter sleep. Unfortunately all that blooming brings a myriad of runny noses and itchy eyes. Needless to say I am not a happy camper today. I've been taking Claritin and that wasn't doing anything so I went and bought some Zyrtec and hoping that will do the trick. I hate taking anything at all but I won't be able to function at work like this.

In spite of my misery I did manage to do a little organizing and laundry. I also made my favorite "fast food"; falafel and tabouleh salad. I do prefer to make my own falafel mix but figured I would try a ready mix I found in the grocery store.



You basically mix it with water and let it sit for about 10 minutes. Then you shape them into small balls or patties and fry in a skillet with olive oil. You can also bake in the oven which I opted to do to save on calories. The ready mix is a little dry and I do think frying in oil makes the falafels a little moister. I usually made greek tzaziki sauce to dip the falafel in. It's very easy; just a mixure of finely chopped cucumber, plain yogurt, lemon juice, red wine vinegar and salt. I also made Tabouleh salad using a mix with the spices already in the bulgur. It was actually very good; I was pretty impressed! I chopped up tomatoes, cucumbers and added them to the salad along with a little olive oil and lemon. Very tasty and very filling!




Here is my finished lunch and of course the kids won't touch it but not bad for a veggie meal.
